The Gilt City Holiday Special
Now, we're a little biased, but we think the best oysters in the world are grown right here in New England (to be specific, here in Duxbury and a few miles south on Cape Cod...but mostly here in Duxbury). We'd like the opportunity to prove that to you, so we've assembled a dozen each of some of the best bivalves we know of, grown by some of the best farmers we know of.
The Gilt City Holiday Special contains three (3) dozen oysters:
Island Creeks hailing from Duxbury, MA With a highly segmented flavor profile, these are the quintessential East Coast oysters. Strong salinity up front gives way to vegetal, mossy, buttery flavors of eel grass and seaweed which crescendo into a robust, sweet finish. It doesn't get any better than this.
Wellfleets from Wellfleet, MA Wellfleets are well known for their high salinity and their clean, simple finish. They are a bit milder than some of our other oysters except for the full blast of salt. They also have a strong vegetal undertone with a well-defined adductor muscle. Depending on the season, Wellfleets can have a trace of minerality towards the end.
Moon Shoal Oysters from Barnstable, MA These beauties are very low in salt with a dairy smoothness about them. They taste like a milk soaked Ritz cracker flavor, sweet and buttery. They are consistently healthy and meaty, and an Island Creek exclusive.
